With lots of nutritious foods like oats, chia seeds, hemp seeds, and dried dates, this delicious gluten-free dessert is super easy to make and sure to please everyone!
INGRÉDIENTS- 2 cups rhubarb stalks, shredded
- 1 1/2 cups dried dates, pitted
- 1/4 cup maple syrup
- 1 tbsp. 1 tbsp chia seeds
- 1/4 cup water
- 2 cups oatmeal
- 1/4 cup chia seeds
- 1/4 cup hemp seeds
- 1 salt
- 1/4 cup coconut oil
- 1/2 cup maple syrup
PRÉPARATION- In a saucepan, bring the ingredients for the rhubarb and date compote to a boil: rhubarb, dates, maple syrup, and water, except for the chia seeds. Reduce heat to medium and simmer for 10 to 15 minutes, stirring occasionally.
- Meanwhile, combine the oats, 60 ml of chia and hemp seeds, and salt in a large bowl. Combine the maple syrup and melted coconut oil, then pour over the dry ingredients. Mix and set aside.
- When the compote is finished cooking, add the chia seeds and stir.
- In a square baking dish lined with parchment paper, press half of the oat mixture. Gently fold in the compote and level off. Finally, add the remaining oat mixture. Bake at 350°F for 20 to 25 minutes. Let cool.
