With lots of nutritious foods like oats, chia seeds, hemp seeds, and dried dates, this delicious gluten-free dessert is super easy to make and sure to please everyone!

INGRÉDIENTS

PRÉPARATION
  1. In a saucepan, bring the ingredients for the rhubarb and date compote to a boil: rhubarb, dates, maple syrup, and water, except for the chia seeds. Reduce heat to medium and simmer for 10 to 15 minutes, stirring occasionally.
  2. Meanwhile, combine the oats, 60 ml of chia and hemp seeds, and salt in a large bowl. Combine the maple syrup and melted coconut oil, then pour over the dry ingredients. Mix and set aside.
  3. When the compote is finished cooking, add the chia seeds and stir.
  4. In a square baking dish lined with parchment paper, press half of the oat mixture. Gently fold in the compote and level off. Finally, add the remaining oat mixture. Bake at 350°F for 20 to 25 minutes. Let cool.
