INGRÉDIENTS- Thick slices of sourdough or brioche
- 1/2 cup ricotta cheese
- 1 tsp honey
- Pinch of salt
- 1/2 cup chopped rhubarb
- 1 tbsp maple syrup or brown sugar
- 1/4 tsp vanilla
PRÉPARATION- Preheat oven to 375°F (190°C). Toss rhubarb with maple syrup and vanilla, roast for 10–15 mins until soft and juicy.
- Whip ricotta with honey and salt until light and fluffy.
- Toast your bread until golden and crispy.
- Spread ricotta on toast, top with roasted rhubarb and drizzle those glorious juices on top.
- Optional: add mint leaves, crushed pistachios, or a dusting of cinnamon for flair!
