INGRÉDIENTS1 liter (4 cups) small diced strawberries
375 ml (1 1/2 cups) small diced fresh rhubarb
125 ml (1/2 cup) chopped fresh cilantro
1 chopped shallot
3 sliced green onions
1 lime (zest of the whole lime and juice of half, if needed)
Salt and pepper (Tabasco if desired, to taste)
PRÉPARATION- In a bowl, combine all ingredients and serve immediately with tortilla chips or toasted pitas.
- If you're making the salsa ahead of time, mix all the ingredients together except the strawberries and lime juice.
- Just add them when you're ready to enjoy!
Variation: You can replace the shallot with a little chopped red onion.
Tip:The salsa is delicious as a topping on grilled fish.
