Savory Rhubarb and Goat Cheese Tart

- 3 eggs
- Dijon or wholegrain mustard
- Salt and pepper
- Chopped rhubarb
- 1 stalk chopped green onion
- Spring herbs (oregano, thyme, chervil)
- 1 tablespoon maple syrup
- 1 sheet of puff or shortcrust pastry
PRÉPARATION- Preheat oven to 375°F.
- In a bowl, beat eggs until smooth. Set aside.
- In a separate bowl, combine the mustard, chopped rhubarb, green onions, herbs, maple syrup, and salt and pepper. Set aside.
- Roll out the dough into a baking dish.
- Place the cheese in small pieces over the dough.
- Carefully pour the egg mixture over the dough, making sure the cheese doesn't move around too much. Add the rhubarb mixture.
- Sprinkle with a few more herbs and rhubarb pieces, then bake for 1 hour.
