Margaritas


PRÉPARATIONRhubarb Syrup
  1. In a saucepan, combine the chopped rhubarb, water, and sugar.
  2. Bring to a boil over medium heat, then reduce heat to low.
  3. Cook for about 10 to 15 minutes, until the rhubarb is tender and the mixture is syrupy.
  4. Strain the syrup through a fine-mesh sieve into a bowl or jar, pressing on the rhubarb to extract as much liquid as possible. Discard the solids.
  5. Allow the syrup to cool completely before using.

Margarita
  1. If you would like to frost the rim of the glasses, rub a lime wedge around the edge of each glass.
  2. Dip the rim in salt or sugar, whichever you prefer.
  3. Make the Margaritas:
  4. In a large pitcher, combine the rhubarb syrup, lime juice, and orange juice.
  5. Add ice to the pitcher and stir well to chill the mixture.
  6. Just before serving, add the sparkling water or club soda to the pitcher and stir gently to Mix.

Serve
  1. Fill each prepared glass with ice.
  2. Pour the non-alcoholic rhubarb margarita mix into the glasses.
  3. Garnish with lime slices and rhubarb stems.
  4. Enjoy!
