Rhubarb Margarita

INGRÉDIENTSRhubarb Syrup- 2 cups chopped rhubarb
- 1 cup water
- 1/2 cup sugar
Margaritas- 1/2 cup rhubarb syrup (above)
- 1/2 cup fresh lime juice
- 1/2 cup orange juice
- 1 cup sparkling water or club soda
- Ice
- Lime slices and rhubarb stalks for garnish
- Salt or sugar for rimming glasses (optional)
PRÉPARATIONRhubarb Syrup- In a saucepan, combine the chopped rhubarb, water, and sugar.
- Bring to a boil over medium heat, then reduce heat to low.
- Cook for about 10 to 15 minutes, until the rhubarb is tender and the mixture is syrupy.
- Strain the syrup through a fine-mesh sieve into a bowl or jar, pressing on the rhubarb to extract as much liquid as possible. Discard the solids.
- Allow the syrup to cool completely before using.
Margarita- If you would like to frost the rim of the glasses, rub a lime wedge around the edge of each glass.
- Dip the rim in salt or sugar, whichever you prefer.
- Make the Margaritas:
- In a large pitcher, combine the rhubarb syrup, lime juice, and orange juice.
- Add ice to the pitcher and stir well to chill the mixture.
- Just before serving, add the sparkling water or club soda to the pitcher and stir gently to Mix.
Serve- Fill each prepared glass with ice.
- Pour the non-alcoholic rhubarb margarita mix into the glasses.
- Garnish with lime slices and rhubarb stems.
- Enjoy!
