Rhubarb Beet Puree

- 3/4 pound rhubarb, cut into thirds
- 1/2 small white onion
- 1 tablespoon honey
- 2 tablespoons thyme leaves, plus more for garnish
- Olive oil
- Salt and pepper
PRÉPARATION- Preheat oven to 375F.
- Arrange beets, rhubarb, and onion on a baking sheet and coat generously with olive oil, salt, and pepper.
- Bake until tender, about 40 minutes.
- Put the cooked vegetables in your food processor, add the honey, and blend until light and fluffy, leaving some chunks. Add the thyme, then season with salt and pepper to taste.
