PRÉPARATION
  1. Preheat the oven to 210°C. In a bowl, combine the flour, almond flour, oat flakes, and sugar.
  2. Add the almond paste and egg.
  3. Pack the mixture into a square pan lined with parchment paper.
  4. Bake for 20 to 25 minutes, until the pastry is golden brown.
  5. Peel the rhubarb and cut into small pieces.
  6. Steal with a little water and the brown sugar. The rhubarb should be completely "unraveled."
  7. Strain to collect all the juice, pressing well.
  8. Return this juice to the saucepan, add the syrup and agar-agar.
  9. Bring to a boil and simmer for 1 minute.
  10. Add the drained rhubarb and coat the cooked pastry with this mixture.
  11. Let cool, then cut into bars.
