Rhubarb Bars

INGRÉDIENTS- 100 grams of wheat flour T65
- 30 grams of oat flakes
- 40 grams of almond powder
- 50 grams of whole sugar
- 70 grams of white almond puree
- 1 egg
- 700 grams of rhubarb
- 3 tbsp. of light cane sugar
- 4 tbsp. of raspberry (or strawberry) syrup
- 1 tsp. (2 grams) of agar-agar
PRÉPARATION- Preheat the oven to 210°C. In a bowl, combine the flour, almond flour, oat flakes, and sugar.
- Add the almond paste and egg.
- Pack the mixture into a square pan lined with parchment paper.
- Bake for 20 to 25 minutes, until the pastry is golden brown.
- Peel the rhubarb and cut into small pieces.
- Steal with a little water and the brown sugar. The rhubarb should be completely "unraveled."
- Strain to collect all the juice, pressing well.
- Return this juice to the saucepan, add the syrup and agar-agar.
- Bring to a boil and simmer for 1 minute.
- Add the drained rhubarb and coat the cooked pastry with this mixture.
- Let cool, then cut into bars.
