Rhubarb and Strawberry Gazpacho

INGRÉDIENTSGaspacho- 400g strawberries, halved or quartered
- 300g rhubarb, cut into pieces of approx. 2 cm
- 2 chopped tomatoes
- 1 chopped red onion
- 1/2 tsp pink peppercorns
- 2 tbsp white port
- 2 tbsp olive oil
- 2 dl cold vegetable stock
- salt, to taste
Topping- 1 tbsp olive oil
- 50 g diced white bread
- 100 g diced strawberries
- 50 g finely chopped rhubarb
- 50 g kalamata olives
- 1/2 chopped red onion
- 1/2 tsp finely chopped pink peppercorns crushed
PRÉPARATIONGaspacho- Put the strawberries and all the ingredients up to and including the stock in the blender, mix everything and add salt.
- Cover the gazpacho and refrigerate for about 1 hour.
Topping- Heat the oil in a non-stick frying pan.
- Brown the bread for about 5 minutes until crispy.
- Serve the gazpacho and top with the croutons, strawberries and the remaining ingredients.
