Pan-Fried Rhubarb Chicken

- 4 cups Gingery Rhubarb Sauce (see recipe: Ginger Rhubarb Sauce)
- Fresh cilantro for garnish
PRÉPARATION- Fry the chicken in the Rhubarb Ginger Sauce over medium-low heat until the chicken is fully cooked. This allows the sauce to form a nice patina on the chicken. Serve the extra sauce on the side at the table. Add more delicious spicy sweetness to your chicken!
- Make your gingery rhubarb sauce (follow the instructions in the linked post).
- Once the sauce has thickened, add the breasts directly to the sauce in the pan.
- Cook over low heat for about half an hour, turning the chicken occasionally to coat all sides, until the chicken is cooked through with no pink in the meat.
- Serve garnished as desired.
