PRÉPARATIONMarinade
  1. In a medium bowl, combine the finely chopped rhubarb, soy sauce, honey, olive oil, minced garlic, grated ginger, smoked paprika, ground cumin, salt, and black pepper. Mix well to combine.
  2. Marinate the meat or tofu: Add the pieces of meat or tofu to the marinade, making sure they are well coated.
  3. Cover and refrigerate for at least 1 hour, or overnight for best results.

The skewers
  1. Preheat the grill to medium-high heat.
  2. Thread the marinated meat or tofu onto the skewers, alternating with pieces of red onion and bell pepper.
  3. Grill the skewers: Place the skewers on the preheated grill and cook for 10 to 12 minutes, turning occasionally, until the meat is cooked through and the vegetables are tender and lightly charred.
  4. Transfer the grilled skewers to a serving platter and garnish with fresh herbs. Serve immediately.
