Grilled Skewers Marinated with Salted Rhubarb

INGRÉDIENTSMarinade- 1 cup rhubarb, finely chopped
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- Salt and black pepper taste
Kebabs- 1 lb meat or tofu (such as chicken, beef, or firm tofu), cut into bite-sized pieces
- 1 red onion, cut into chunks
- 1 bell pepper, cut into chunks
- Fresh herbs (such as parsley or cilantro) for garnish
- Kebabs, soaked in water for 30 minutes if wooden
PRÉPARATIONMarinade- In a medium bowl, combine the finely chopped rhubarb, soy sauce, honey, olive oil, minced garlic, grated ginger, smoked paprika, ground cumin, salt, and black pepper. Mix well to combine.
- Marinate the meat or tofu: Add the pieces of meat or tofu to the marinade, making sure they are well coated.
- Cover and refrigerate for at least 1 hour, or overnight for best results.
The skewers- Preheat the grill to medium-high heat.
- Thread the marinated meat or tofu onto the skewers, alternating with pieces of red onion and bell pepper.
- Grill the skewers: Place the skewers on the preheated grill and cook for 10 to 12 minutes, turning occasionally, until the meat is cooked through and the vegetables are tender and lightly charred.
- Transfer the grilled skewers to a serving platter and garnish with fresh herbs. Serve immediately.
