Ginger Rhubarb Sauce

https://www.homemadefoodjunkie.com/rhubarb-ginger-sauce/INGRÉDIENTS- 4 to 5 cups fresh rhubarb, chopped into 1/2-inch lengths
- 1 cup brown sugar
- 1/2 cup balsamic vinegar
- 1 tablespoon red pepper flakes
- 1 tablespoon finely chopped fresh ginger
- 2 Tsp. black pepper
- 1/4 cup raisins
PRÉPARATION- Add all ingredients to a skillet over low heat and mix with a wooden spoon.
- Increase heat to medium and cook until rhubarb is well softened and liquid is reduced to a thick, runny consistency, about 20 minutes.
- Pour into an airtight pint-sized container and store in the refrigerator until ready to use.
Notes- This compote has a little kick from the ginger and red pepper flakes.
- Adjust seasoning to suit your personal taste. The will increase as the compote is stored.
- Keeps well in the refrigerator for at least a week!
