Recipe Creamy Rhubarb Tart

Servings: 1 21 cm (9 in) tart



INGRÉDIENTS

PRÉPARATION
  1. Position oven rack in the bottom of the oven.
  2. Preheat oven to 400 F (200 C).
  3. Spread rhubarb evenly over crust and set aside.
  4. In a medium bowl, combine sugar, flour, egg yolks, milk, and salt.
  5. Using a mixer, beat on high speed for about 1 minute or until pale and fluffy.
  6. Pour over rhubarb.
  7. Bake at 400 F (200 C) for 20 minutes. Reduce oven heat to 350 F (175 C) and bake for 20 to 30 minutes longer or until a thermometer inserted in the center reads about 90 C.
  8. Let the pie cool on a wire rack.
