Recipe Rhubarb, Goat Cheese, and Honey Pizza

INGRÉDIENTS

PRÉPARATION
  1. Preheat the oven to 220°C (425°F). If using a pizza stone or pizza pan, preheat the pan as well.
  2. Toss the rhubarb slices with a little olive oil, balsamic vinegar (if using), and a drizzle of honey. Let rest while you roll out the dough.
    Roll or stretch the pizza dough into a thin round or oval on a floured work surface. Place on a sheet of parchment paper or a floured pizza peel.
  3. Assemble the pizza: Lightly coat the dough with olive oil.
  4. Sprinkle with goat cheese slices and red onion.
  5. Spread the rhubarb slices evenly over the top.
  6. Sprinkle with salt, pepper, and a few thyme leaves.
  7. Baking: Place in a hot oven and bake for 10 to 14 minutes, or until the crust is golden brown and crispy.
  8. Finishing: Drizzle with honey while hot.
    Sprinkle with fresh thyme or a handful of arugula if desired.
