Rhubarb, Goat Cheese, and Honey Pizza

INGRÉDIENTS- 1 ball of pizza dough (store-bought or homemade)
1 to 2 rhubarb stalks, thinly sliced
100g goat cheese, crumbled
½ small red onion, thinly sliced (optional for extra flavor)
1 tablespoon olive oil
1 teaspoon balsamic vinegar (optional)
1 to 2 teaspoons honey (plus a little for drizzling)
A few sprigs of fresh thyme or arugula for garnish
A pinch of salt and black pepper
Cornmeal or flour for dusting
PRÉPARATION- Preheat the oven to 220°C (425°F). If using a pizza stone or pizza pan, preheat the pan as well.
- Toss the rhubarb slices with a little olive oil, balsamic vinegar (if using), and a drizzle of honey. Let rest while you roll out the dough.
Roll or stretch the pizza dough into a thin round or oval on a floured work surface. Place on a sheet of parchment paper or a floured pizza peel. - Assemble the pizza: Lightly coat the dough with olive oil.
- Sprinkle with goat cheese slices and red onion.
- Spread the rhubarb slices evenly over the top.
- Sprinkle with salt, pepper, and a few thyme leaves.
- Baking: Place in a hot oven and bake for 10 to 14 minutes, or until the crust is golden brown and crispy.
- Finishing: Drizzle with honey while hot.
Sprinkle with fresh thyme or a handful of arugula if desired.
