Rhubarb Chutney

- 1 onion, cut into small pieces
- 1 apple, cut into small pieces
- 1/2 cup (125 ml) Sultana raisins
- 1/2 cup (125 ml) cider vinegar
- 1 cup (250 ml) sugar
- 2 tbsp. tsp (10 ml) salt
- White pepper
- 1 piece of ginger, cut into 3, on a toothpick
PRÉPARATION- Mix all ingredients and cook over medium heat until boiling.
- Continue cooking over low heat, uncovered, stirring occasionally, for about 1 hour.
- Remove from heat, remove ginger, then jar.
